Voyage et cuisine : Madrid Fusion Manila
S’il y a bien 2 choses dont je ne pourrai pas me passer dans la vie, c’est me faire plaisir en mangeant et voyager.
Je trouve que ces 2 activités sont intimement liées et je découvre mes différentes destinations à travers mes papilles gustatives. J’ai redécouvert la cannelle sous toutes ses formes en Suède, les nombreuses utilisations de la ricotta en Italie, le pain pita et le curry doux à l’Ile Maurice, l’avocat en Californie, le lait de coco en Thailande…
Chaque voyage influence mes gouts et ma façon de cuisiner.

J’ai eu la chance d’être invité à ce super évènement qu’est Madrid Fusion à Manille aux Philippines , où des chefs de 22 pays sont présents pour partager leurs connaissances et rivaliser d’ingéniosité pour émerveiller nos papilles.
J’ai découvert le Champorado de Mama Sita au salon Madrid Fusion, c’est délicieux !
J’ai pu gouter la cuisine de différents chefs, et j’ai aussi profité de 2 diners grand luxe.
Un à Gallery Vask, un endroit extraordinaire avec un jardin d’herbes aromatiques et plantes pour la cuisine sur le toit, une balançoire, des canapés très confortable et une vue extraordinaire.
Le soir suivant, on a pu manger à The Tasting Room qui a été pour moi le meilleur repas de mon séjour. Des mariages de saveur parfait, des produits de qualité et une présentation magnifique. Lors de cette soirée, j’ai rencontré 2 chefs pâtissiers philippins : chef Peachy Juban et chef Miko Aspiras.
Miko m’a parlé de tous ses voyages qui l’inspirent pour ses créations, j’ai décidé de lui poser quelques questions.
You told me you travel to get inspiration how do you get inspired while traveling ?
I get inspired by a lot of things, may it be for an upcoming pastry competition, creating new food concepts or simply for my day to day activities. One of the best ways for me to get Inspiration is through travelling. It is when I travel that I get challenged by what I see, in terms of food or pastry, I get agitated by seeing lots of people from all over appreciate confection, and that’s what I want to achieve in the Philippines, for Filipinos to appreciate desserts more, more than just a meal ender but as a luxury, a treat at the end of hard days work. I also want to get the reaction of the people I see abroad from the people who get to taste my food.How did France inspired your cooking ?
France or French methods influenced my foundation in baking and pastry production, that is my first knowledge when it comes to technique. I was trained in school to follow the French methods, then when I started working I realized that the French way is the only way if you want to perfect or strengthen your basics. I all went under the eye of a French chef during the most critical times of my career, chef Cyrille Soenen he was my executive chef that time, although pastry wasn’t his Forte, he challenged me to expand my French pastry vocabulary. Nowadays I always rely on my basics in whatever dessert I make, I tie it up with own style and spunkI didn’t get to see your presentation but I was told how inspiring it was. What was your favorite moment / meeting / thing / dinner during Madrid fusion Manila ?
My Madrid fusion Manila experience was amazing! My favorite part was how I was able to present on stage and simply be able to tell my story, through my thought process and through my food. I also love the fact that I did it together with the most amazing chefs from around the world, the most caring production team, and using the most exciting local and imported ingredients

tu as dit que manger et voyager sont 2 choses que tu ne peut pas passer dans la vie, je crois que tu as oublié un autre élémént sans lui tes voyages manquerons du sel et du sucre hhhh c’est l’amour ma belle.

La cuisine qui m’a le plus influencé est celle du sud-est asiatique (Thailande et Malaisie). Et un aliment en particulier, le piment. Je ne comprenais pas trop au début pourquoi les habitants de ces régions mangent autant de piments et j’étais un peu réticent à en manger mais après avoir essayé je ne peux plus m’en passer.

J’avais déjà visité Madrid mais je ne savais pas que des lieux pareils existait là-bas. Cela me donne envie de la visiter une nouvelle fois et vivre cette belle expérience.
